Chilaquile : tortilla lasagna | seasonal vegetables | tomato casera sauce

The foundation of our menu is the basic ingredients and cooking techniques of the Yucatan Pensinsula, where our chef, Bruce Uc├ín, grew up. He fuses those flavors with seasonal ingredients to create his own distinct style. Some dishes have have very traditional Mayan roots like the cochinita pibil, while others are a representation of Chef Bruce’s creativity, like his version of chilaquiles, pictured here, or his famous tok-sel lima beans.
