November 2016 Feature Menu: Carrots

Quinoa Salad

This month, we are featuring carrots in all of our special dishes. Carrots are one of those root vegetables that we enjoy from our farmers in both the spring and fall. Carrots can be grown in many colors including white, yellow, red, or purple. In fact, purple, yellow and red carrots were the only color varieties of carrots to be cultivated before the 15th or 16th century! Not only are carrots rich in anti-oxidents, reserach has recently showed that carrots help inhibit the growth of colon cancer cells. In addition to all of these great health benefits, they just taste good! Enjoy them in both this fresh fall salad or roasted as a side with our entree special this month. Cheers to carrots!
