Mayan Cafe owners Bruce Ucán and Anne Shadle are excited to announce the opening of their next venture. On August 18, 2017, they will open Mayan Street Food, a food truck serving street food originating from Chef Ucán’s native Yucatan peninsula. The truck will be the exclusive food partner of Gravely Brewing Co, a brewery and music venue serving up craft beer and craft music, located at 514 Baxter Avenue. Owners Nathaniel Gravely & Cory Buenning sought out Mayan Café as their food partner for its strong reputation of quality food and local sourcing as well as Ucán’s start as a food truck in 1996, arguably the first food truck in Louisville. Buenning and Gravely are brothers-in-law and Shadle and Ucán are brother and sisters-in-law, so they all share the value of building solid family businesses. The food truck will be open for service Monday through Saturday evenings and will serve a variety of snacks, tacos and salbutes, Mayan puffy tacos.
Says Chef Ucán, ”The food is meant to be fun and casual, easy to eat at a bar and the right complement for Cory’s craft beers.” Each dish will feature local meats and fish, working with such Kentucky farms as Pike Valley Farms, Garey Farms, Fin Gourmet Foods and Rootbound Farm. Their commitment to local sourcing will remain as strong here as it is at their 10-year old restaurant and they intend to show the restaurant scene in Louisville that farm-to-table is a trend that’s here to stay. Nathaniel Gravely says, “We are passionate about combining fresh beer and live music in ways that have never been done before and the addition of Mayan Street Food as our food partner creates a curated and memorable experience for all of our guests. We are thrilled to partner with these guys.”
