Edible Santa Barbara comes to Louisville & the Mayan Cafe!

Shannon Essa, from Edible Santa Barbara, came to Louisville not long ago to eat and write about our fair city.  She ate at 610 Magnolia & Jack Fry’s, visited 21C Museum Hotel & had coffee at Heine Brother’s. This is what she had to say about Mayan Cafe :

“Chef Bruce Ucán (pictured above) is the winner of the Edible Louisville Local Hero award in the chef/restaurant category. He uses all local ingredients in his dishes, which are Mayan based. The food here is simply – incredible. After a starter of tasty guacamole, I had a trio of Yucatec Salbutes – small tostadas with various toppings. Chef Tok-sel lima beans are not run of the mill. Mine were topped with local pork, seasonal vegetables, and black beans topped with local goat cheese. We had an extra plate of “Tok-sel”lima beans – a dish of lima beans so good, that it seemed to be the one thing everyone kept telling me I had to try. Lima beans are blanched, then sauteed with green onions, parsley and roasted pumpkin seeds in sesame oil, then drizzled with lemon juice. Lucky for us, Chef Ucán has the recipe on his website.”
