July 2016 Feature Menu: Purple Peruvian Potatoes

Chef Bruce Ucan

This month, we are featuring Peruvian purple potatoes in all of our special dishes. Purple potatoes are rich in the same antioxidant found in blueberries & pomegranates, so they’re really good for you. They originated in Peru & Bolivia but can be grown here as well. This month, we’ll be getting them from a couple different farms – Happy Jack’s Pumpkin Farm & Nelson Escobar. The salad and entree this month are both medium-bodied dishes with great citrus flavors and a touch of roundness which will pair great with our white Rioja wine. This wine is barrel-fermented so it takes on some of the creamy roundness from the oak. It’s also medium-bodied with a brightness and richness to it that leaves you with a smile after your first sip.
