- Redfish Tik-in xic : this traditional Mayan dish features redfish baked in banana leaves with achiote sauce and Mexican rice
- Chicken Entree : we are roasting Schacht Farm chicken breast in sage cream sauce with local wheatberry & cabbage – hearty & delicious!
- Pip : another extremely traditional dish of masa cornflour with chicken and a rich tomato sauce cooked inside, almost like a potpie. So yummy!
- Pulled Chicken Sandwich : we are roasting the chicken in achiote sauce and making a chilled salad on brioche bread and serving it with house-made potato chips
