Spicy Jicama Salad
2 peaches (medium-sized and ripe)
1 jicama (small-sized)
1 orange or grapefruit
1/4 cup of blueberries (or fresh papaya chopped, if blueberries not available)
1 pinch of cayenne pepper
1/2 oz olive oil
juice of 2 limes
1/2 cup of orange juice
salt to taste
Cut peaches in wedges and discard the seed.
Peel jicama and cut in half-inch cubes.
Peel orange and take out segments.
Peel cucumber and slice.
Wash blueberries (or peel and cut papaya in cubes)
In large bowl, mix all cut fruit.
Squeeze lime juice.
Add cayenne, orange juice, olive oil and salt.
Let marinate for approximately 15 minutes before serving.
