This July brings an abundance of squash – patty pan squash, zucchini, zephyr squash, squash blossoms … we could go on! Many of these squash varieties are staples in the Mayan diet, so this gives us plenty of reason to celebrate these delicious vegetables. We have put together several featured dishes along with an enchanting bottle of Spanish albarino to complement them. Buen provecho!
