Quoting sources that promise rabbit is the new white meat, he purports that things could be changing on the meat scene in Louisville. Gibson talks with several chefs and restauranteurs who have rabbit on their menus, gauging diner’s interest and reception to the meat.
At the Mayan Cafe, we can’t say enough good things about our rabbit entree! It’s been a mainstay on the menu for over 4 years now, and is quite a talking piece. All of the health benefits of the meat combined with the ease of sourcing it locally make it one of our favorite dishes.
